Phloem carries the products of photosynthesis (sucrose, amino acids) from the LEAVES (where they're made) to other parts (growing tips, fruits, roots for storage). Movement called TRANSLOCATION - can be in either direction depending on where the demand is. Sieve tube cells joined end-to-end through sieve plates.

Answer: The loss of water vapour from leaves (mostly through stomata)
Water absorbed by roots -> travels up xylem -> evaporates from leaf surfaces into the air, mostly through STOMATA (pores in lower epidermis). The 'transpiration stream' continuously pulls water + minerals up the plant. Faster transpiration in: high temperature, low humidity, wind, bright light. Excessive loss = wilting -> stomata close (controlled by guard cells).
